Ingredients You'll Need
- 1 large head cauliflower (about 4 cups riced)
- 2 tablespoons sesame oil
- 3 eggs, beaten
- 1 cup mixed vegetables (peas, carrots, corn)
- 3 green onions, sliced
- 3 cloves garlic, minced
- 1 tablespoon fresh ginger, minced
- 3 tablespoons low-sodium soy sauce
- 1 teaspoon rice vinegar

How to Make It
- Cut cauliflower into florets and pulse in a food processor until it resembles rice grains. Alternatively, use pre-riced cauliflower from the store.
- Heat 1 tablespoon sesame oil in a large skillet or wok over medium-high heat. Add beaten eggs and scramble until cooked through. Remove and set aside.
- In the same skillet, add remaining oil. Add garlic and ginger, sauté for 30 seconds until fragrant.
- Add cauliflower rice and mixed vegetables. Stir-fry for 5-7 minutes until cauliflower is tender but not mushy.
- Return scrambled eggs to the skillet. Add soy sauce, rice vinegar, and green onions. Stir everything together for 2 minutes.
- Taste and adjust seasoning with additional soy sauce or pepper if needed. Serve hot.
